It comes from the Frosts line Morakniv builds for the food industry.

Best for

Full-size prep: breaking down cabbage and squash, slicing roasts, and rock-chopping herbs and onions in quantity. The longer, wider blade covers more board per stroke and gives your knuckles clearance. It's a working knife with a no-frills handle, the kind that lives on a prep line. If you want something shorter, the Mora Frosts 4171 is the 7 inch version. For grip and cutting motions, see Knife Techniques: The Beginners Guide.

Care

Stainless steel resists rust, but hand washing and drying protects the edge and the rubber grip. When it stops biting into a tomato skin, it's time for the steps in How to Sharpen a Kitchen Knife.

Questions

What does PG mean on the 4216PG? It marks Morakniv's Progrip handle, a double-molded rubber grip with an etched surface built for wet hands.

How hard is the steel? 58 HRC. The Swedish cold-rolled stainless blade is hardened by deep refrigeration.

Is 8.5 inches too long for a home kitchen? Not if you have a full-size cutting board. On a small board, the 7 inch 4171 is easier to manage.
