  • Blade width: about 1 5/8 in
  • Blade thickness: 1.9 mm
  • Total length: 314 mm (12.4 in)
  • Weight: 128 g (4.5 oz)
  • Steel: Swedish cold-rolled stainless steel, hardened by deep refrigeration
  • Hardness: 58 HRC
  • Handle: glass fiber reinforced polypropylene with a soft rubber over-mold and an etched, textured grip

Best for

Everyday chopping, slicing and dicing, especially on a smaller cutting board or for cooks who find an 8 inch blade a bit much. Frosts knives are made for commercial food work, so the handle is built for grip in wet hands rather than looks. Want more length? The Mora Frosts 4216PG is the 8.5 inch version. New to a chef knife? Care

Stainless steel resists rust, but hand washing and drying keeps both the edge and the grip in good shape. Touch up the edge with the method in How to Sharpen a Kitchen Knife.

Questions

Is the 4171 stainless steel? Yes. It's Swedish cold-rolled stainless steel, hardened by deep refrigeration to 58 HRC.

Does the handle get slippery when wet? Morakniv designed the double-molded rubber grip with an etched surface specifically for wet conditions.

Should I get the 7 inch or the 8.5 inch? The 4171's 7 inch blade is quicker to control on a small board. The 4216PG's 8.5 inch blade, about 1 7/8 inches wide, covers big produce and roasts in fewer strokes.
