Enameled Cast Iron Round Dutch Oven, 5-Qt
The 5-quart round Dutch oven is the default size for a reason: big enough for a stew that feeds a family, small enough to lift with one hand on each handle. Heavy cast iron holds a steady temperature through a long braise, which is the whole job.
What It Is For
Braises, stews, soups, beans and no-knead bread. The heavy lid traps steam and returns it to the pot so a long cook stays moist. The enamel is non-reactive, so tomato, wine and citrus go in freely, and the pot moves from stovetop to oven to the table without transferring anything.
Care
Enamel needs no seasoning and works from the first meal, but it dislikes thermal shock. Let the pot cool before washing, never run cold water into a hot pot, and avoid abrupt temperature swings. Hand wash with warm water, mild soap and a soft sponge, avoid abrasive cleaners, and dry thoroughly before storing. Low to medium heat handles most stovetop work. Check the lid's temperature limit before oven use.
