At its simplest it is tomatoes, red onion, chili, lemon or lime, and salt, with cilantro and sometimes cucumber or avocado. It is bright, sharp, and built to cut through rich food.
The name traveled. Kachumbari comes from the same root as the Indian salad kachumber, carried to the Swahili coast by Indian traders and laborers, then adapted with local ingredients and the ever-present chili. The technique that makes the East African version distinct is what you do to the onion first.
Rinse the Onion, Firm the Tomatoes
Raw red onion straight from the board is harsh and can dominate the bowl. The fix is to slice it thin, then soak it in cold water for ten minutes and drain, or toss it with a little salt and lemon juice and let it sit while you prep everything else. Both pull out the sulfurous bite and leave the onion crisp and mild.
For the tomatoes, use firm, ripe ones and cut them into wedges or thick half moons, not a fine dice. Seed them if they are very juicy. You want distinct pieces that hold their shape, not a slurry. Dress the salad just before serving so the tomatoes stay firm.
Kachumbari
Serves 4 as a side. Prep 15 minutes, resting 10 minutes, total about 25 minutes.
Ingredients
- 4 firm ripe tomatoes, cut into wedges or thick half moons
- 1 large red onion, halved and thinly sliced
- 1 to 2 fresh chilies, such as serrano or bird's eye, thinly sliced
- 1/4 cup fresh lemon or lime juice, plus more to taste
- 1/2 teaspoon salt, plus more to taste
- 1/2 cup chopped cilantro
- 1 small cucumber, halved and sliced, optional
- 1 avocado, diced, optional, added at the end
- 1 tablespoon olive oil, optional
Method
- Put the sliced onion in a bowl and cover with cold water. Let it soak 10 minutes, then drain well. Or toss it with a pinch of salt and 1 tablespoon of the lemon juice and set aside.
- Cut the tomatoes into wedges or thick half moons. If very juicy, scoop out the seeds.
- In a serving bowl combine the tomatoes, drained onion, chilies, and cucumber if using.
- Add the lemon or lime juice, salt, and olive oil if using. Toss gently.
- Let it sit 10 minutes for the flavors to come together. Toss again and taste for salt and acid.
- Fold in the cilantro, and the avocado if using, right before serving so it stays intact.

Tips and Variations
- Rwandan and Burundian style: often includes cucumber and sometimes green bell pepper, with a lighter hand on the chili.
- With avocado: common in Kenya, and it makes the salad more substantial. Add it last and toss gently.
- Serve with: nyama choma (grilled meat), pilau, chapati, ugali, githeri, or any bean stew.
- Make ahead: prep the components separately and combine within 30 minutes of serving. Dressed kachumbari does not keep well past a few hours.
