Method
- Season the chicken with salt, pepper, and Italian seasoning. Heat the olive oil in a large skillet over medium high heat and sear the chicken 5 to 6 minutes per side, until golden and cooked through. Remove to a plate.
- Lower the heat to medium and add the garlic and cherry tomatoes to the same skillet. Cook 3 to 4 minutes, stirring occasionally, until the tomatoes begin to blister and soften.
- Return the chicken to the pan, nestling it among the tomatoes. Lay the mozzarella slices over each piece, cover the pan, and cook 2 to 3 minutes until the cheese is fully melted.
- Scatter the basil over the top and drizzle with the balsamic glaze just before serving.
