
This is taco night without the assembly line. Instead of frying shells and setting out ten bowls of toppings, everything simmers together in one skillet and gets ladled over rice or into a bowl. It has all the flavor of tacos with a fraction of the cleanup.
Ground turkey is leaner than ground beef, which means it can dry out if it is overcooked, so it comes off the heat the moment it loses its pink color. The tomatoes, beans, and corn that follow keep everything moist through the simmer.
The Four Components
- Protein. Ground turkey, browned and seasoned with a taco spice blend.
- Starch. Rice underneath, or tortilla chips crumbled over the top.
- Vegetable. Black beans and corn, stirred in to bulk out the skillet.
- Sauce. Diced tomatoes and their juice, simmered down with the spices into a light sauce.
Turkey Taco Skillet
Serves four. Prep five minutes, cook twenty minutes, total about twenty five minutes.

- 1 1/2 lb ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon oil
Sauce and vegetable
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1 (14 oz) can diced tomatoes
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup corn kernels
- Salt, to taste
Starch and toppings
- 2 cups cooked rice
- Shredded cheese, sour cream, cilantro, lime wedges
Method
- Heat the oil in a large skillet over medium high heat. Add the onion and cook 2 minutes, then add the garlic and cook 30 seconds more.
- Add the ground turkey, breaking it apart, and cook until it just loses its pink color, about 5 minutes.
- Stir in the chili powder, cumin, smoked paprika, and garlic powder, and cook 30 seconds until fragrant.
- Add the diced tomatoes, black beans, and corn. Simmer 8 to 10 minutes, stirring occasionally, until slightly thickened. Season with salt to taste.
- Serve over the rice with cheese, sour cream, cilantro, and lime wedges.
