One Pan Lemon Garlic Salmon with Asparagus

Salmon is one of the few proteins that genuinely cooks faster than the oven takes to preheat, which makes it the fastest real dinner on this page. A hot oven, a sheet pan, and about twelve minutes is the entire cook time once the vegetables are trimmed.

Asparagus goes on the same pan because it roasts in almost exactly the same time as a salmon fillet, so nothing waits on anything else. Garlic and lemon do double duty, seasoning the fish and the vegetable at once with a single spoon of butter.

  • 4 tablespoons butter, melted
  • 3 cloves garlic, minced
  • 1 lemon, half juiced and half sliced
  • 2 tablespoons chopped parsley

Method

  1. Heat the oven to 425F and line a sheet pan with foil or parchment.
  2. Toss the asparagus with the olive oil, salt, and pepper, and spread it along one side of the pan. Place the salmon fillets on the other side and season with salt and pepper.
  3. Whisk the melted butter, garlic, and lemon juice together. Spoon it evenly over the salmon fillets and lay a lemon slice on top of each one.
  4. Roast 12 to 15 minutes, until the salmon flakes easily with a fork and the asparagus is tender with a little char.
  5. Scatter the parsley over everything and serve straight from the pan.

How do I know the salmon is done?

It should flake easily with a fork and look opaque throughout. The FDA lists 145F as the safe internal temperature for fish, though many cooks pull it a few degrees earlier for a slightly more medium center.

Skin on or skin off?

Either works here since the fillet is roasted rather than pan seared for crisp skin. Skin on holds together a little better on the pan.

Can I use frozen salmon?

Yes, thaw it fully in the refrigerator first and pat it dry, or it will release extra water onto the pan and steam instead of roast.
