Best for

Foraging. Cut the stem clean, brush off the dirt in the field, and your basket stays cleaner on the walk home. Back in the kitchen, it's just as useful for trimming stems and brushing grit off mushrooms before they hit the pan. Put the haul to work in Garlic Butter Skillet Mushrooms.

Care

It's carbon steel, so clean and dry it after each outing and keep it out of the dishwasher, as Roselli advises. A short blade still needs a keen edge; How to Sharpen a Kitchen Knife walks through it.

Questions

What's the difference between the R115LC and the R115? The R115LC's sheath has a moose leather cord for carrying. Roselli's R115 is the same knife with a plain sheath and no cord.

What is the brush made of? Arenga fiber, a natural fiber from the Arenga pinnata sugar palm.

Is the blade stainless? No. It's carbon steel at around 60 HRC, so dry it after use to keep rust off.
