13-Inch Fillet Knife, Engraved Bone and Wood Handle
A 13-inch fillet knife with a long, gently flexing high-carbon steel blade and a two-part handle: hardwood near the bolster and an engraved bone end cap with a hand-cut stag motif and copper pins. Each handle is finished individually, so no two are identical.
Blade
Polished high-carbon steel, full tang. It holds a keen edge and resists wear better than basic stainless, and it needs less upkeep than a Damascus blade: a few passes on a honing rod keeps it working. The blade flexes to follow the contour of a rib cage or backbone for clean, low-waste fillets.
Sheath and care
Ships with a dark brown leather sheath, diamond-embossed, with a snap-button closure and a belt loop for carrying in the field. Dry the blade fully before it goes back in the sheath, and condition the leather now and then.
