Ceramic Nonstick Crepe Pan, 10"
A crepe pan is a frying pan with the sides taken off. The rim sits about an inch high, so a spatula slides under a crepe almost flat instead of dropping over a wall, and you can tilt and swirl batter to the edge without it pooling in a corner.
What It Is For
Crepes and pancakes first, then omelettes, tortillas, quesadillas and grilled sandwiches. At 10 inches it makes a crepe that fits a dinner plate. How It Cooks
A forged aluminum body on a stainless steel induction base heats quickly and evenly, which matters more for thin batters than almost anything else: a hot spot shows up immediately as a scorched patch in a crepe. The ceramic surface releases delicate batters with very little butter.
Care
Cook on low to medium heat, which is all this surface needs. Add a little oil or butter rather than aerosol spray, never heat the pan empty, and use silicone, nylon or wooden utensils. Let it cool before washing, then hand wash with a soft sponge. No abrasive pads or harsh cleaners.
