- 8 small flour tortillas, warmed

Method
- Toss the chicken with the cumin, chili powder, smoked paprika, garlic powder, salt, and pepper.
- Heat 1 tablespoon oil in a large cast iron or heavy skillet over high heat until it shimmers. Add the chicken in a single layer and sear undisturbed 2 minutes, then flip and cook 2 to 3 minutes more until cooked through. Remove to a plate.
- Add the remaining oil and the peppers and onion. Cook undisturbed 2 minutes to let them char, then stir and cook 3 to 4 minutes more until charred at the edges and just tender.
- Return the chicken to the pan, squeeze the lime juice over everything, and toss to combine. Serve immediately with warm tortillas and toppings.
