How to Make a Cobb Salad

How to Make a Cobb Salad

A Cobb salad is a composed salad: chopped lettuce underneath, then rows of cooked chicken, bacon, hard cooked egg, avocado, tomato, and blue cheese laid across the top. It was invented at the Brown Derby in Hollywood in the 1930s as a way to use up the icebox, and it turned into one of the few salads that eats like a full meal.

The trick is not the ingredients, which are all easy. It is treating it like a plating job. Everything gets chopped to about the same size, everything gets its own lane, and the dressing goes on at the table so the greens do not wilt under the weight.

Why It Works: Same Size, Separate Rows

Cutting every component to a rough half inch dice does two things. It means every forkful gets a bit of each thing instead of a mouthful of plain lettuce followed by a mouthful of bacon. And it makes the rows sit flat and neat, which is the whole look of the dish.

Keeping the rows separate until serving matters because avocado and tomato both weep. Toss it all together early and you get a pink, wet salad in ten minutes. Laid out in rows, it holds for half an hour, and the person eating it does the mixing.

Cobb Salad

Serves 4 as a main. Prep 30 minutes, cook 15 minutes, total about 45 minutes.

Ingredients

  • 2 boneless skinless chicken breasts, about 1 pound
  • 6 slices bacon
  • 4 large eggs
  • 1 romaine heart and a few handfuls of watercress or frisee, chopped
  • 2 ripe avocados, diced
  • 2 cups cherry tomatoes, halved
  • 3 ounces blue cheese, crumbled
  • 2 tablespoons chopped chives
  • Salt and black pepper
  • Ranch dressing, to serve

Method

  1. Lower the eggs into boiling water, cook 9 minutes, then move to ice water. Peel and quarter.
  2. Lay the bacon in a cold skillet, set over medium heat, and cook until crisp, about 10 minutes, turning once. Drain on paper towels, then chop.
  3. Season the chicken with salt and pepper. Cook in the bacon fat over medium heat, about 6 minutes a side, until it reaches 165 degrees Fahrenheit at the center. Rest 5 minutes, then dice.
  4. Spread the chopped lettuce and watercress across a wide platter or four plates.
  5. Lay the chicken, bacon, egg, avocado, tomato, and blue cheese in separate rows on top. Scatter the chives over everything.
  6. Grind black pepper over the top. Take it to the table with the ranch on the side and let people dress their own.

Tips and Variations

Leftover roast chicken or a store rotisserie bird cuts this to a 20 minute salad. Pull the meat while the eggs cook.

Turkey, ham, or crisped chickpeas all stand in for the chicken. The structure is what matters, not the specific protein.

If blue cheese is a hard no at your table, use a mild feta or extra egg and let the ranch carry the tang.

Cook the eggs and bacon a day ahead. Dice the avocado last, right before it goes on the plate, and squeeze a little lemon over it.

The Dressing

Cobb takes a thick, herby dressing, and homemade ranch is the classic pairing. The recipe, including the buttermilk and the dried herb ratios, is on the ranch dressing recipe. Blue cheese dressing works here too if you want to double down.

Frequently Asked Questions

What lettuce goes in a Cobb salad?

The original used a mix of iceberg, romaine, watercress, and chicory, all finely chopped. Romaine plus watercress or frisee is the easy modern version. Keep it chopped small so it sits flat.

Do you toss a Cobb salad or not?

You serve it in rows and let each person toss their own portion with dressing. Tossing the whole thing in the kitchen turns the avocado to paste and wilts the greens before it reaches the table.

How do I keep the avocado from browning?

Dice it last and toss the pieces with a teaspoon of lemon or lime juice. On a composed salad that is served within half an hour, browning is rarely a problem anyway.

Can I make a Cobb salad ahead?

Prep every component and store them separately in the refrigerator, up to a day for the egg, bacon, and chicken. Assemble the platter within an hour of serving and add the avocado last.

What is the ratio of toppings to lettuce?

Heavier on the toppings than a normal salad, close to half and half. This is a main course, so each serving should carry a real portion of protein.
