What is the difference between otoro and chutoro?
Both come from the belly. Otoro is the fattiest section, nearest the head, pale pink and heavily marbled. Chutoro is the medium-fat belly between otoro and the lean loin, akami. Grading is a matter of judgment and the boundaries are not fixed.
