Bear is the leading source of human trichinellosis in North America. The parasite lives encysted in muscle tissue, and both black bear and brown bear carry it. There is no way to see it, smell it, or taste it. A bear that looks perfect, was taken cleanly, and was cooled properly can still be infected.

The rule is simple and it has no exceptions: cook all bear meat to an internal temperature of 165 degrees Fahrenheit, verified with a thermometer. Not 145. Not medium rare. Not the temperature you would use on venison or elk backstrap. Freezing Does Not Work on Bear

Handling and Cross Contamination

Treat raw bear the way a professional kitchen treats raw poultry. Dedicate a board to it. Wash everything that touched it in hot soapy water before it touches anything you will eat raw. The Fat Layer

A fall bear can carry several inches of fat over the back and rump. This is the defining feature of the animal for a butcher, and it cuts both ways.

Bear fat is soft and low melting, closer to pork fat than beef fat, and rendered properly it is superb. It is one of the finest pastry and frying fats available, prized for pie crust long before anyone was writing it down. That is the upside.

The downside is that soft, unsaturated fat goes rancid quickly, and it carries the flavor of whatever the bear was eating. Fat left on the muscle is the number one reason people say they dislike bear. A bear that ate salmon tastes like the fat, not like the meat. Trim it off the muscle and render it separately and you have solved most of the flavor problem in one step.

Spring Bear Versus Fall Bear

A spring bear coming off the den is lean, and the meat is generally milder because the animal has been living off its own reserves rather than feeding hard. There is little fat worth rendering.

A fall bear is the opposite. Heavy fat, more meat, and a flavor that tracks the diet closely. A fall bear off berries and acorns is excellent. A fall bear off a salmon run or a landfill is a different proposition, and the fat is where you taste it. Ask where the animal was taken and what it was feeding on. That question tells you more about how the meat will eat than any inspection of the carcass will.

Field Care and Skinning

Bears hold heat. The fat layer that makes them valuable also insulates the carcass, and a bear will spoil from the inside while the outside still feels cool to the hand. Speed matters more here than on a deer of similar size.

  1. Get the hide off early. The hide is the insulation. Leaving it on to cool the animal is backwards on a bear. If you are keeping the hide, skin it promptly and deal with the hide separately.
  2. Open the cavity and remove the viscera. Standard field dressing, with care around the bladder and bowel.
  3. Get air on the meat. Quarter it if you cannot hang the whole animal in a cool space. Heat trapped between a quarter and the ground is what sours meat.
  4. Do not wash it down and leave it wet. Water on a warm carcass in warm air is worse than a little dirt you can trim later.
  5. Keep the paws and head attached if your jurisdiction requires it for identification or sealing. Rules vary and they are enforced. Check your current state or provincial regulations before you cut anything off.

Skinning a bear takes longer than skinning a deer. The hide is thicker, and the fat between hide and muscle wants to stay with the hide in some places and the meat in others. Work the blade against the hide, edge angled toward the skin, and let the curve of the skinning knife do the work. If you are saving the hide for a taxidermist, stop and get their cutting instructions first. The cuts they want are not the cuts you would make for meat alone.

Step by Step Breakdown

Removing the Quarters

  1. Front shoulders first. There is no bone joint holding a front shoulder to the skeleton, only muscle. Pull the leg away from the body, run your blade into the gap that opens, and keep the edge riding against the ribs. The whole shoulder lifts away. This is the easiest major cut on the animal and a good place to start.
  2. Hindquarters second. These attach at a ball and socket. Cut down through the muscle to expose the joint, rotate the leg outward to pop the socket, then cut the remaining connective tissue. Support the weight as it comes free. A bear hindquarter is heavy.
  3. Neck and shanks. Take the neck as a whole piece for grind or braise. Shanks come off at the joint above the knee, and the cleaver handles what the knife cannot.

Backstraps and Tenderloins

The backstraps run the length of the spine on the outside. Cut down along one side of the spine until you hit the vertebrae, then turn the blade and follow the bone outward, peeling the strap off in one long piece. Long strokes, not sawing. This is where blade length earns its keep.

The tenderloins are inside the cavity along the underside of the spine, and they are the best two pieces on the animal. On a bear as on any big game, take them early. They dry out fast if the carcass hangs with them exposed.

Trimming Fat From Muscle

This is the step that decides how the bear tastes, and it is the step most people rush.

Separate the fat from the muscle completely. Not mostly. Completely. Every piece of bear that is going into the freezer as meat should be trimmed clean of the soft outer fat, because that fat will go rancid in the freezer and take the meat with it, and it will carry whatever the animal was eating into every dish you make.

Keep the fat. Put it in a separate container as you work and render it later. You are not throwing away the best part of the animal, you are separating two products that need to be handled differently. Silverskin and heavy connective tissue come off too and go in the bin, not the grind.

A bear generates a lot of trim. Work in an organized way: clean muscle in one tub, fat for rendering in a second, grind trim in a third, waste in a fourth.

  • Tenderloin. The most tender meat on the animal. Small. Roast whole.
  • Hindquarter. Separate into the individual muscle groups along the natural seams. The larger muscles make good roasts. The rest goes to grind or stew.
  • Shoulder. Braise or grind. Bear shoulder is worked muscle with a lot of connective tissue, and a long braise turns that into something better than any quick cooking method will.
  • Shanks. Bone in, braised long and slow. One of the best things on the animal and routinely wasted.
  • Neck. Grind, or braise whole if you have the vessel for it.
  • Ribs. Heavy fat between the bones. Trim aggressively, then cook long. Many people skip bear ribs entirely and that is a defensible choice.
  • Grind. The largest single category by weight. Bear grind makes good sausage, chili, and burger, all cooked through by definition, which suits the safety requirement.
  • Fat. Rendered separately. Covered next, and it may be the most valuable thing you take home.

Yield note: bear yields poorly relative to its live weight because of the fat and the heavy bone. Expect roughly a third of live weight as trimmed boneless meat, less on a heavy fall animal, and treat the rendered fat as a separate yield in its own right.

Rendering Bear Fat

Rendered bear fat is a genuinely excellent cooking fat, and this is the section that turns a bear from an obligation into a windfall.

  1. Start clean. Use only fat you trimmed off muscle, with no meat, blood, or connective tissue clinging to it. Meat scraps in the pot make the fat taste like meat and shorten its shelf life dramatically.
  2. Cut it small or grind it. Smaller pieces render faster and more evenly. Running the fat through the grinder on a coarse plate is the fastest route.
  3. Render low. Low heat in a heavy pot, with a splash of water at the start to prevent scorching before the fat begins to liquefy. Low and slow gives you a mild, near white, neutral fat. Too hot gives you a brown fat that tastes strongly of bear, which is exactly what you were trying to avoid.
  4. Strain twice. Once through a coarse strainer, once through cloth. Any solids left in the jar will spoil.
  5. Store cold. Pour hot into clean jars, seal, and refrigerate or freeze. Bear fat is soft and unsaturated, so it does not hold at room temperature the way beef tallow does. Treat it like a perishable, because it is one.

Use it for pie crust and biscuits, where it outperforms most commercial shortenings, for frying, and for sealing potted meats. It is worth doing even if you are ambivalent about the meat itself.

  • Braising. The best all round method for bear. Shoulder, shanks, and neck go into liquid with aromatics and cook for hours.   • Slow roasting. Backstrap and hindquarter roasts, cooked at moderate oven heat to temperature and rested. Gentle heat and a thermometer get you to 165 without drying the outer inch to leather.
  • Grinding and sausage. Bear takes pork fat well in a sausage blend if you want a milder result, or use its own rendered fat. Cook through, always.

  • Smoking. Hot smoking only, finished to 165 degrees. Cold smoking bear is unsafe and should not be attempted.

Bear takes assertive company well: juniper, dark beer, root vegetables, bay, and enough acid to cut the richness. Handle it more like pork shoulder than like venison and you will be closer to right.
