Forest Carbon Steel Frying Pan
Carbon steel takes heat that would ruin a nonstick pan, which is what a proper sear needs. The surface starts bare and builds its own seasoning as you cook, so it releases food better in year three than it did in week one. One thing to know before choosing: this pan is for the stovetop and is not oven safe.
What It Is For
Steaks, chops, burgers, and vegetables you want browned rather than softened. Carbon steel is lighter and more responsive than cast iron, so it changes temperature quickly when you move the burner and it is easier to handle one-handed. Three sizes cover a single portion up to a family dinner.

Seasoning and Care
Cook with a small amount of oil or fat to keep building the seasoning layer. Do not soak the pan and never put it in the dishwasher. Dry it completely after washing, then wipe on a very thin film of oil before storing, and never store it wet. Hold off on long-simmered acidic dishes with tomato, citrus or wine until the seasoning is well established. Darkening and uneven color are normal. If rust appears, scrub it back, dry, oil and re-season.
