This is the compromise pan: five-ply stainless construction underneath, ceramic nonstick on top. You get the even heating of fully clad cookware with a surface that still releases eggs and fish, which bare stainless will not do without technique and patience.

What It Is For

Eggs, fish, pancakes and anything delicate that you would not trust to bare steel. The five-ply body spreads heat across the whole surface rather than concentrating it under the burner, so the coating is not being cooked at a much higher temperature in the middle than at the edge. That is the practical reason clad construction matters on a nonstick pan.

Care

Ceramic nonstick wears out fastest under high heat, and it does not need high heat to work. Cook on low to medium, use a little oil or butter rather than aerosol spray, and keep metal utensils away from the coating. Let the pan cool before washing, then hand wash with a soft sponge. No abrasive pads or harsh cleaners.
