Zucchini chips have a reputation problem: most home versions come out limp instead of crisp, and people blame the oven for what is actually a moisture problem. Zucchini is almost entirely water, and if that water is still sitting in the slice when it hits the heat, it steams the coating from the inside before it ever gets the chance to brown.
