Step-by-Step Instructions

  1. Warm the Milk:

    Heat the milk in a small saucepan over low heat or in the microwave until warm to the touch (do not boil). Keeping the milk warm prevents lumps when combining it with the hot roux.

  2. Make the White Roux:

    Melt the unsalted butter in a medium heavy-bottomed saucepan over medium heat. Once melted, add the all-purpose flour. Whisk continuously for about 1 to 2 minutes until the flour is fully incorporated and bubbling gently.

  3. Incorporate the Milk:

    Gradually pour in the warm milk in a steady stream while whisking continuously to prevent lump formation. Ensure you reach into the corners of the saucepan

  4. Simmer & Thicken:

    Bring the mixture to a gentle simmer over medium-low heat, stirring constantly with a wooden spoon or whisk. Cook for 5 to 7 minutes, or until the sauce thickens enough to coat the back of a spoon (a consistency known as nappe).

  5. Season & Finish:

    Remove the saucepan from the heat. Stir in the kosher salt, white pepper, and freshly grated nutmeg. Taste and adjust seasoning if necessary.
